- 1/3 cup turbinado sugar
- 3 tbsp. cornstarch
- ¼ tsp. sea salt
- 2 cups plain almond milk or unsweetened coconut milk beverage
- 1¼ tsp. pure vanilla extract
- 2 tsp. unsalted butter
Instructions:
1. Stir together the sugar, cornstarch, and salt in a small bowl. Set aside.
2. Add the almond milk to a medium saucepan. Place over medium heat and cook, stirring occasionally, until the milk comes to a simmer and bubbles form near the edges. (Do not boil.)
3. Very gradually pour the sugar mixture into the simmering milk, whisking continuously until the sugar is fully dissolved and the mixture thickens enough to coat the back of a spoon, about 2½ minutes.
4. Remove the mixture from the heat and whisk in the vanilla extract and butter. Once the butter melts, pour the mixture through a fine-mesh strainer (to collect any lumps) into individual ramekins or serving dishes and chill in the refrigerator for at least 3 hours.
5. Serve chilled.

Choose the spice or flavor you prefer—ginger or orange, for example, or if you are a traditionalist, just use your favorite plain dark chocolate.

Ingredient List:
- 6 full sheets whole-grain graham crackers, neatly broken in half
- 1 (2½-ounce) spicy bittersweet or other dark chocolate bar, evenly broken into 6 pieces
- 6 large all-natural marshmallows
Instructions:
1. Place the graham cracker halves on a cutting board or platter. Top 6 of the crackers with the chocolate.
2. Skewer the marshmallows onto two long metal skewers, leaving a space between each marshmallow. Gently toast over an open flame or hot grill to desired brownness, rotating during the toasting.
3. Place a toasted marshmallow onto each piece of chocolate, then immediately top with the remaining crackers, pressing firmly to create a sandwich.
