Easy Mixed Berry Muffins

- 2 cups vegan Bisquick mix
- ⅔ cup soy milk
- ¼ cup sugar
- 2 tablespoons olive oil
- 1 tablespoon applesauce
- 1 teaspoon ground flaxseed
- ½ cup frozen mixed berries
How to make Easy Mixed Berry Muffins ?
Preheat the oven to 400ºF. Line two 12-cup muffin tins with paper liners.
In a large bowl, combine the Bisquick, soy milk, sugar, olive oil, applesauce, and flaxseed and beat with an electric handheld mixer until smooth. Fold in the frozen berries.
Divide the batter evenly among the lined muffin cups. Bake the muffins for 10 to 15 minutes, or until a bamboo skewer inserted into the center of a muffin comes out clean.
