Say what you will about the Russians—they know how to boil a cabbage. Shchi is one of the national soups of Russia, and much like pasta in Italy or cheese in France, it can vary greatly from region to region. Some regions use sauerkraut, some use a ton of sour cream; this recipe is a healthy vegan hybrid of them all that’ll keep you so warm all winter, you won’t even need a fur hat. Seriously, please don’t wear fur. It’s super mean.

Ingredients for Green Shchi Russian Cabbage Soup recipe

  • 3 tablespoons olive oil
  • 1 red onion, chopped
  • 1 cabbage, cored and sliced
  • 4 or 5 new potatoes, quartered
  • 2 large carrots, sliced
  • 2 stalks celery, chopped
  • 2 bay leaves
  • ½ teaspoon crushed black peppercorns
  • 8 cups vegan chicken broth or vegetable broth
  • 3 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • Bread, for serving

How to make Green Shchi Russian Cabbage Soup ?

In a large soup pot or Dutch oven, heat the olive oil over medium heat. Add the onion and use a wooden spoon to move the onion around a bit to make sure it cooks evenly. Once the onion is tender, add the remaining ingredients, except the bread, to the pot, stir, and cover. Once the soup begins to bubble, reduce the heat to maintain a simmer.
Let the soup simmer until the potatoes are tender, about 20 minutes.
Serve hot, with some bread for dipping.
