Ready, steady, dunk!
That was the traditional school game at lunchtime and for afternoon snacks. We used to sit with our cookie of choice and chosen hot drink, set the timer and get dunking. It was a bit like Russian roulette, as we wanted to hold on long enough to win, but not so long that our cookie broke off and sunk, wasted, to the bottom of the mug. I like to think that we were just taking science and math out of the classroom as, after years of practice, we decided that it all came down to cookie density, weight and angles—well, that was my excuse for devouring a whole package in one sitting.

The big problem with cookies is they are so easy to eat with every cup of tea or coffee from about 11 a.m. to 5 p.m. Because they are often small and unfilling, they easily disappear without us even thinking about the calories we are swallowing, so for my cookies, I decided the fewer the calories in each one the better.
Each recipe in this chapter makes 24 cookies, but because, as I said, I can never stop with one, I have made all the servings two cookies each, but each serving still falls below the 300 calories and 6g of fat limit. So, what are you waiting for? Get dunking.
