Dessert Recipe 1: Chocolate
Chip Cookie Dough Keto Ice Cream

Ingredients:
       
2 1/2 cups cream
       
1 cup almond milk
       
1/2 cup Swerve
       
3 egg yolks
       
1 teaspoon vanilla extract
       
1/4 teaspoon each liquid stevia extract and xanthan
gum
Cookie Dough:
1 cup almond flour
1/4 teaspoon salt
1/4 cup softened butter
1/4 cup Swerve
1 small egg
1/4 tsp vanilla extract
1/8 cup cacao nibs
Directions:
  1. Place a bowl over an ice bath
    and set aside.
  2. Combine the cream, almond milk,
    and Swerve over medium heat, until the mixture reaches 175 degrees.
  3. Whisk the egg yolks in a medium
    bowl.
  4. Slowly add 1 cup of the hot
    cream mixture while whisking, in order to temper the yolks.
  5. Add the yolk mixture back into
    the saucepan and cook until mixture reaches 180 degrees.
  6. Pour mixture into the bowl that
    is on top of the salt bath for 10 minutes.
  7. Cover the bowl with plastic
    wrap and refrigerate for 3 hours.
  8. While the ice cream is
    chilling, Whisk the almond flour and salt for the cookie dough.
  9. In another bowl, beat the
    butter and Swerve.
  10. Combine the egg and vanilla
    into the butter mixture, then mix in the dry ingredients.
  11. Fold in the cacao nibs.
  12. Spoon the cookie dough onto
    waxed paper by the teaspoon.
  13. Place cookie dough in the
    freezer.
  14. Take out the ice cream and
    stir in the vanilla extract and stevia extract.
  15. Sprinkle with xanthan gum and
    stir until smooth.
  16. Pour the ice cream into the
    canister of an ice cream maker and churn according to manufacturer’s
    directions.

    cream, transfer half of it to a large, airtight container. S

Directions:

    extract or powder, and vanilla.
  6. Gradually combine the hot milk
    mixture into the cream cheese until smooth.
  7. Add the salt.
Set the bowl in the ice water bath,
stirring occasionally, for 20 minutes.

    the ice bath for 10 minutes, then wrap in plastic wrap and chill for 3
    hours.
  8. After 3 hours, add the vanilla
    and Stevia and pour the ice cream into a canister and churn in ice cream maker
    according to manufacturer’s directions.
  9. Swirl in half of the frozen
    raspberries.
  10. Transfer remaining mixture to
    the container and swirl in remaining berries.
  11. Freeze for 1 hour.
