Directions:
- Place a bowl over an ice bath
and set aside. - Combine the cream, almond milk,
and Swerve over medium heat, until the mixture reaches 175 degrees. - Whisk the egg yolks in a medium
bowl. - Slowly add 1 cup of the hot
cream mixture while whisking, in order to temper the yolks. - Add the yolk mixture back into
the saucepan and cook until mixture reaches 180 degrees. - Pour mixture into the bowl that
is on top of the salt bath for 10 minutes. - Cover the bowl with plastic
wrap and refrigerate for 3 hours. - While the ice cream is
chilling, Whisk the almond flour and salt for the cookie dough. - In another bowl, beat the
butter and Swerve. - Combine the egg and vanilla
into the butter mixture, then mix in the dry ingredients. - Fold in the cacao nibs.
- Spoon the cookie dough onto
waxed paper by the teaspoon. - Place cookie dough in the
freezer. - Take out the ice cream and
stir in the vanilla extract and stevia extract. - Sprinkle with xanthan gum and
stir until smooth. - Pour the ice cream into the
canister of an ice cream maker and churn according to manufacturer’s
directions. - Once you have churned the ice
