Ingredients for Sweet Beet Mix recipe
- 2 large beets, scrubbed and very thinly sliced
- 2 large sweet potatoes, scrubbed and very thinly sliced
- 2 tablespoons olive oil
- ½ teaspoon sea salt
- ¼ teaspoon ground cumin
- ¼ teaspoon curry powder
How to make Sweet Beet Mix ?
Preheat the oven to 400ºF. Line a cookie sheet with aluminum foil.
Toss the beets and sweet potato slices in a large bowl with the olive oil until they are lightly coated.
Spread the beets and sweet potatoes out in a single layer on the lined cookie sheet. You may need to bake them in batches or on two sheets.
Bake for 20 to 25 minutes. Keep an eye on them; depending on how thin the vegetables are cut, some may bake faster than others. Halfway through baking, flip the chips with a spatula so both sides bake evenly. Once the edges are crispy, the chips are ready to take out of the oven. Don’t worry if the center is still a little tender. Move them to a large plate lined with a paper towel to soak up any extra oil.
Sprinkle the chips with salt, cumin, and curry powder and let cool to room temperature before eating.
CURRY POWDER
It can be frustrating trying to figure out which curry powder to buy. Some brands are very specific, using proper names like garam masala or ras el hanout, but often you’ll just see descriptive terms like “mild” or “hot” on two different bottles that appear to hold a relatively similar golden powder. But while each blend is unique in its own way, they usually share the same key flavors. We kept it pretty generic in our recipes so that you can use whichever curry powder you prefer or have access to.
