Simple Soba Noodles:  If you follow me on any of the various social networks out there, you know I live my life by a few mottos. One is this: You can never have enough noodles.

Ingredients for Simple Soba Noodles recipe

  • 1 (8-ounce) package soba noodles
  • 5 cups vegetable broth
  • 1 tablespoon diced fresh lemongrass (optional)
  • 1 carrot, shredded
  • ⅔ cup snow peas
  • ¼ cup frozen corn
  • ⅔ cup cremini, shiitake, or enoki mushrooms
  • ⅔ cup baby spinach leaves
  • ½ cup broccoli florets, cut small
  • 1 clove garlic, minced

How to make Simple Soba Noodles ?

In a large soup pot or Dutch oven, combine all the ingredients. Bring to a boil over medium heat, then reduce the heat to maintain a simmer and simmer until the noodles are tender. This should take about 5 minutes. We recommend following the instructions on your package of soba noodles.
Serve hot.

You can use any leftover frozen corn to make:
