Ingredients for Simple Soba Noodles recipe
- 1 (8-ounce) package soba noodles
- 5 cups vegetable broth
- 1 tablespoon diced fresh lemongrass (optional)
- 1 carrot, shredded
- ⅔ cup snow peas
- ¼ cup frozen corn
- ⅔ cup cremini, shiitake, or enoki mushrooms
- ⅔ cup baby spinach leaves
- ½ cup broccoli florets, cut small
- 1 clove garlic, minced
How to make Simple Soba Noodles ?
In a large soup pot or Dutch oven, combine all the ingredients. Bring to a boil over medium heat, then reduce the heat to maintain a simmer and simmer until the noodles are tender. This should take about 5 minutes. We recommend following the instructions on your package of soba noodles.
Serve hot.
