Cheezy Croutons
Using day-old bread to make croutons before it gets stale is a great way to eliminate waste in the kitchen. We make a lot of croutons because, I admit, I adore freshly baked bread. We live close to several bakeries in Brooklyn, and there are only two of us, so there’s usually more bread around our kitchen than there are opportunities to eat it. We also love salads.
You can use these croutons on any mixed green salad, like the Club Sandwich Salad , or in any soup, like the Ribollita .

Ingredients for Cheezy Croutons recipe
- ½ baguette, or 6 to 8 slices of your favorite bread
- ¼ cup olive oil
- 2½ teaspoons nutritional yeast
- ¼ teaspoon smoked paprika
How to make Cheezy Croutons ?
Preheat the oven to 300ºF. Line a rimmed cookie sheet with aluminum foil.
Using a serrated knife, cut the bread into cubes and place them in a large bowl. In a small bowl, whisk together the olive oil, nutritional yeast, and paprika.
Add the oil mixture to the bread cubes and toss until they are lightly coated, then arrange them on the lined cookie sheet, spreading them out so they aren’t touching.
Bake for 10 to 15 minutes, until the croutons are lightly toasted and have crispy edges. Let cool to room temperature before serving.
Store in an airtight container in the fridge.
