Club Sandwich Salad with Dijon Mustard Dressing

The club sandwich’s origin story is shrouded in mystery. Some say it was invented in a Saratoga Springs resort in the 1800s. Some say it’s been an American staple since long before that. No matter where you stand on the great club sandwich creation debate, let’s all agree on this: This sandwich-inspired salad is frakking good!

Ingredients for Club Sandwich Salad with Dijon Mustard Dressing recipe

Dijon Mustard Dressing

  • 2 tablespoons Dijon mustard
  • ½ cup tahini
  • ¼ cup apple cider vinegar
  • 1 tablespoon agave nectar
  • 1 teaspoon soy sauce or Bragg’s Liquid Aminos
  • 2 tablespoons chopped fresh parsley
  • 1 clove garlic, minced
  • ¼ teaspoon crushed black peppercorns
  • ½ teaspoon dried thyme

Salad

  • ½ package Hickory Smoked Tofurky Deli Slices
  • 1 head romaine lettuce, chopped
  • 6 or 7 cherry tomatoes
  • 1 large carrot, shredded
  • 2 tablespoons vegan bacon bits
  • ¾ cup vegan croutons, such as Cheezy Croutons

How to make Club Sandwich Salad with Dijon Mustard Dressing ?

Make the Dijon mustard dressing: In a food processor, combine all the dressing ingredients and process until creamy. Set aside.
Make the salad: Without separating the slices, chop the Tofurky into bite-size pieces and place them in a large bowl. Add the remaining salad ingredients and toss together.
Drizzle the desired amount of dressing over the top right before serving.
